Ginger Elizabeth shared her story with us. “My Mom and Dad are entrepreneurs, so I have always wanted to be the proprietor of my own business. I remember watching Julia Childs as a child, and pretending to be her. In high school, my teachers encouraged my love for cooking; so I made key lime pie for my Huckleberry Finn project, and wrote a cookbook on the Foods of the British Isles for my high school senior thesis.”

Fascinated with chocolate and its beautiful and complex characteristics, Ginger Elizabeth Hahn sought to fulfill her dream of opening her chocolaterie, which has become a place for “regulars” to appease their chocolate craving with delightful and decadent morsels. All of her chocolates are hand made, using traditional artisan methods of chocolate making, only using the finest ingredients.
A formally trained American chocolatier, Ginger Elizabeth began learning her craft at age 16 at a truffle class in Sacramento at the Learning Exchange. From there, she took classes at the Culinary Institute of America in Napa while in high school; and went on to study in New York, working for two world-renowned chocolatiers: Jacques Torres and Daniel Budd. Hungry for more knowledge on the subject of chocolate, she headed to Chicago and got a job at the Ritz-Carlton, working for En-Ming Hsu, the top pastry chef in the world at the time.
Her perseverance and a keen love for the art of chocolate was the driving force in her quest to open her own couture chocolate shop, which had its grand opening in January 2008. Ginger will be adding frozen hot chocolate and outdoor seating this Summer, so she invites you to partake in her amazing specialty chocolates and desserts.
For all of you true chocolate connoisseurs, here is one of Ginger Elizabeth’s recipes:
Molten Chocolate Cake (Serves 10)
Ingredients:
2 Sticks (8 oz.) Butter
1 Package (8 oz.) Ginger's Hot Chocolate Mix
2 1/4 Cups Powdered Sugar – sifted
5 Egg Yolks
5 Eggs
1 Cup Pastry Flour – sifted
Instructions:
1. Preheat oven to 350° F
2. Melt the chocolate and butter together over a double boiler. Remove from the heat.
3. Mix in the sifted powdered sugar watching for lumps.
4. Add the yolks and eggs. Mix thoroughly.
5. Add the sifted flour and mix until just combined with no lumps.
6. Spray 4 oz. ramekins or a muffin tin with nonstick spray. Fill the containers with the batter using a spoon or scoop.
7. Bake at 350° F for 6 minutes. Rotate and bake for another 6 minutes. Remove from the oven and serve.
